It's really just more of the same hiccups for any restaurant opening, but we always find a way to press through because the dream only burns that much brighter. And what's the story with the name? Hopmonk represents a marriage between the art and science of beer making. Hops, being the seminal ingredient in nearly all beer styles, are in most cases the key component of an individual brewer's 'signature' in that style and, therefore, represent the 'art' of brewing. "Monk" is a tribute to the Monks of Northern Europe, who brought a certain methodology and management to the brewing process, thereby symbolizing the 'science' of brewing. The name, to us, pays homage to the end result, with an overlay of reverence - a deep respect, tinged with awe for what we serve by the glass. Prost!
