Dean Biersch and co-founder Dan Gordon opened their flagship Gordon Biersch Brewery Restaurant in Palo Alto - 7/1988. Combining Dan's expertise in German style brewing and Dean's hospitality experience, the two went on to build 10 brewery-restaurant projects in many of their favorite places, like San Francisco, Seattle, Honolulu, Phoenix and San Diego. The charge was always to produce fresh, authentic German style beers such as Marzen, Export, Dunkles, Dunkleweizen and Hefeweizen to a thirsty market, paired with tasty food of course, and wherever possible, in a comfortable beer garden setting

In 1995 the company built a full production brewery to bottle and keg its beers and began distributing to markets their restaurants served. Due to regulatory issues, the restaurant side of the business was sold in 2000. Dean worked with the brewery for several years. Then in 2008 he opened his new HopMonk Tavern concept in Sebastopol, CA. Riding the huge surge in craft beer popularity, HopMonk focuses on bringing all brewing styles, traditional and not so traditional - to the table.

Friendly and informed tavern service, expansive beer gardens and live music complete the HopMonk experience. HopMonk is now three taverns (two in historic buildings) and two dedicated live music venues featuring such artists as Steve Kimock, Sean Hayes, Bob Schneider, Jackie Greene, Leon Russell, Les Claypool, David Grisman, Citizen Cope, Michael Rose and Elvin Bishop - and groups like Cracker, The Meat Puppets, The Mother Hips, Tea Leaf Green, Jefferson Starship, English Beat and The New Mastersounds.
